發覺店內貨物日少,
似乎是要結業了.
曾經看著她嘗試轉型,
以便利店的形式經營,
估不到,
宿命是隨著時代步伐的改變,
終要與澳門人說再見.?

竟然給我先後遇到M 及T.
真好!
真的是很久不見,
M剛從CA回來,
大學剛畢業,
現正找工作,
祝他找份理想工作.
較晚時則見到T,
難得多年沒有見,
真的是稀客,
同是住在澳門,
不約的話,
真的是像住在另一地方.
突然想起,
上周二晚上亦在路上見到L,
她提議食飯一聚,
由於身體不適,
建議待恢復時,
約她吃飯,
希望支票早日兌現!

星期三晚,政府包機在機場降落後,受驚過度的母親就在家人的陪同下到了政府安排的車上等候,我一人站在眾多死者家屬之中,靜靜參加了遺體告別儀式。風笛奏着《Amazing Grace》,很莊嚴,也很淒涼。我看着棺木上的白布貼着一個個的團友名字,淚水如注。誰會想到這個旅行團回到香港時會是這個樣子?
我淚眼看着傅太帶着她的一對子女到她丈夫遺體棺前告別。她只有四歲的小女兒在飛機上不時嬌滴滴的問母親:媽媽,為什麼爸爸回香港但是不回家?媽媽,為什麼我閉上眼睛會看到爸爸?一句句稚子無知的問題,聽得人心絞痛,可敬的是傅太仍堅強得很,仍以逗小孩的聲音平和地對女兒說爸爸已上天國,着女兒和爸爸說再見,過了一會,才傳來她痛哭的聲音。還有汪小妹的呆滯眼神,如所有情緒被抽乾了,讓人看得心痛。下機前,我走到導遊Masa 的母親前面,握着她的手,不知道跟她說什麼,只能說,我很想謝謝Masa,他一直很照顧團友,直到最後一刻。
回家的路上,我透過車窗看着天上的月亮,圓得讓人心痛,不知是農曆十五還是十六,又是那麼亮,亮得那麼冷漠。
這幾天我把事情想了很多遍,心裏有極大的憤怒和悲傷,還有說不出的愧疚。我一直在想,為什麼我們沒有行動起來拯救自己?為什麼在漫長的等待過程後,我們仍靜靜期盼那似乎是永不會來的救援、把自己的命運交付那無能的政府?
我們當中確是有想過要自己起來制服槍手的,到底是什麼讓我們猶豫了?是我們害怕,也是因為我們都相信槍手並不想殺人,我們一直以為事件會和平解決,當然,我們最大的錯誤是我們高估了當地警察的能力。
槍手大概是早上十時左右上車,當時我們剛要離開菲律賓國父紀念古堡。他上車時以菲語嘰哩咕嚕了一堆,後來用了一些簡單英語,在當地導遊的翻譯下,我們明白他是一個警察,認為自己被無理革職,原來他明年一月就要退休了,他要求政府重新調查,讓他復職,讓他可以重得失去的百萬元披索退休金。槍手又多次向我們道歉,他說他也不想這種事發生在我們身上,說只是想我們幫他,逼政府注意他的個案,他三番四次強調不會傷害任何人,只要我們合作幫他。他請導遊把我們的手機沒收,但是並沒有認真檢查我們是否真的交出手機(這讓我其後後悔自己真的交出了手機),他又強調他不是要我們的手機,只是暫時收走而已,他又說他不是要我們的錢,真的,他從來沒有查看或要求我們交出任何財物。不久,他容許肚痛的李老太下車,讓傅太帶着幾個小孩下車,又讓患糖尿病的李老伯下車,這都讓我們認為,他是擁有最基本的人道關懷,認同要照顧老幼病殘,所以他該不是窮兇極惡之徒。在他最後開槍之前,他從來沒有把槍指向我們任何一個人,從來沒有威嚇過我們,只要我們告訴他「toilet」,他都會揮手示意讓我們去,於是十個小時內,大家都在車尾堆滿雜物的小室內以膠袋如廁。首幾個小時,槍手說電話時,語氣平靜,有時還語帶笑意,一聲聲「ok、ok」的,讓我們心寬,間或又再強調不會傷害我們,還容許外面兩次送飯給我們。一直到黃昏之前,大家雖然是擔心又害怕,但車內的氣氛算是平和,並不恐怖。我看了好幾次自己的掌紋,想,我的生命線很長呢,以前看掌好多次,不同的睇相佬不是都這樣說的嗎?我對自己說,這次事件只是鬧劇,一定會圓滿解決。
沒有如果
開始的時候,我們認為槍手要求這麼簡單,該可以在一兩小時內和平解決,直到十二時多,我等得有點不耐煩,就小聲向坐在車尾的團友建議一起動手制服槍手。槍手單人匹馬,我們全團人雖然婦女小孩老人較多,但有點打鬥能力的男人、可以協助的青年和成年女子加起來也有十人左右,在狹窄的車廂內反抗空間不多,大家團結的話,總該可以把他制服的吧。不過,我們當時按槍手要求坐得很分散,每排只可坐一個人,旅遊車又長,大家不能商量,就沒有了行動的默契。我和坐在後排的幾名團友多次商量,不過,因為當時的氣氛仍非常平和,大家相信事件可以和平解決,認為如果行動失敗反而會激怒槍手,所以沒有行動起來。
槍手說下午三時釋放人質
到了下午一時多,槍手用簡單英語告訴我們三時會讓我們走,我聽錯了是八時,坐我旁邊那排的梁生還糾正我,是三點,梁生再問槍手確認3pm?槍手說yes,梁生大聲地回了一句good,大家也如釋重負。我沒有帶手表習慣,手機又被沒收,不時會問梁生時間,當梁生告訴我已經二時半,我的心又慌了,為什麼政府似乎仍是靜靜的沒有行動,又沒有答應槍手要求,自己心裏在想,要不要我們自己和槍手談判?可是槍手又似乎只會非常簡單的英語……好幾次槍手開門在車門前立足停下來時,我都想要跑到他身後用力把他踢出去,也在腦中預習了很多遍,但是又怕自己不能和司機溝通,怕司機不夠機警不會立即關門和開車逃走,讓槍手有時間反攻……我想了很多不同的可能性,最終都沒有行動,可能我只是在為自己的恐懼和怯懦找藉口。
多次商量擬合力制服槍手
時間一直拖着,始終未見任何解決事件迹象,我們在車尾的幾名團友再幾次商量要不要動手制服槍手。我們留意他的武器擺放在身上的位置,他走到什麼地方時最好動手,商量大家身邊有什麼可攻擊的東西,我說我雖然是身材矮小的女子,但如果男團友可以暫時壓着槍手,我可以搶槍和按着槍手的手令他不能行動,給時間車頭的團友逃走及求助,梁生亦靜靜叮囑子女在行動時要協助搶槍。可是,最終我們仍是猶豫,不敢亂來,皆因槍手把談判設定的限期往後推了又推,等待政府回應他的訴求,讓我們覺得,他是不想殺人的,直到槍手真的開槍射向前排幾個團友,梁生撲出去救家人時,一切都太遲了。後來我和梁太說起,原來她也想過要攻擊槍手,用她袋裏的繩子去勒槍手的頸。如果我們都可以勇敢一些,如果我們早些團結行動,如果我們沒有繼續等待警察救援而當機立斷行動起來,可能會有不一樣的結果,可恨的是,歷史是沒有如果的。
默念心經躲在椅底下保命
我躲在椅子底下,逃過了槍殺。剎那間,我不敢相信原來電影裏的情節真會發生在自己身上。我看到在另一排也躲在椅子底下的母親仍是活的,心就定了一些。第一輪槍擊後,車內很靜,這時天打起雷來,轟轟的一陣一陣,雨點又噠噠的打在車頂,更顯得車內一片死寂。車廂內很黑,只有槍手發現有人仍是活着時,再打出的一些槍聲和火光。我看到藍色的火光打入團友的身體,原來在蠕動的身體就不再動了,連哼一聲都沒有。隔了好一會,再又響起很多震耳欲聾的槍聲,和車身不斷被打擊的聲音,一切都不斷提醒仍生還的人,下一秒可能就會斃命。
看着前面那些不動的身體,我心裏自然的念起「謁諦謁諦,波羅謁諦,波羅僧謁諦,菩提娑婆訶」,希望已死去的團友可以快到彼岸,這是我長年看到有生命離世時的習慣。我不自覺地想,他們真的死了嗎?幾分鐘前仍活着的人,現在的靈魂仍在車廂內徘徊嗎?我把般若波羅蜜多心經慢慢的在心中念了很多次,一字一字的細細再咀嚼, 「觀自在菩薩,行深般若波羅蜜多時,照見五蘊皆空,渡一切苦厄……無罣礙故,無有恐怖,遠離顛倒夢想」,我想,我仍有什麼罣礙,心中轉念了很多遍,想起自己很多想做的事仍未做,想起親愛的家人朋友,能不死的當然仍是不死的好,但是心中已不像開始時那麼怕,最擔心的是母親在兩次的催淚彈攻擊中發出的咳聲會被槍手發現。槍戰好長好長,好像永遠不會完一樣,我感覺到自己的頭髮和身上染了很多血,都是別人的血,但是下一秒可能就是自己的血了。被救出來之後,這幾天都聞到血腥的味道。
救護車簡陋止血用品欠奉
在救護車上,我們要求救護員給雙手不斷流血的陳生包紮止血,救護員竟說沒有用品,我母親仍受着催淚彈的苦,她想喝水,救護員又說他們沒有水,我看了車上的櫃,果然是空空的什麼設備都沒有,只有苦笑。到了政府醫院,設備也非常簡陋。在我們被轉送去較好的醫院前,有不同的政府部門官員、不同救護機構的人員、領事館的人員,不停地問我為什麼槍手會發起瘋來,突然開槍,我不禁火了,當場忍不住就罵他們,他們到底是不是想救人?天底下會有那麼長時間來救人?槍手暴露了那麼多可以被攻擊的機會為什麼警察沒有把握時機?為什麼就不能先答應槍手的訴求先救人質……?陳先生不斷想找他的女友易小姐的消息,可是哪裏找,醫院裏亂作一團,同樣在醫院裏尋找子女的梁太看起來讓人心都要碎了,她雙眼睜得好大,盛滿淚水,似乎隨時會倒下,我一邊照顧受驚在哭的母親,一邊握着梁太的手,和她一起向在場的政府官員重複她的要求,要求政府人員帶她去找子女,但是無能的官員說,他們並不知道她的子女在哪個醫院……
血腥味揮不去閉目聞槍聲
我在醫院裏,把母親安頓下來,已是清晨近五時,我把染血的衣物褪去,頭髮已被乾了的血弄得僵硬,我洗了很久很久,濃濃的血腥味讓我有想吐的感覺。出來坐在沙發上,看着睡在病牀上母親順着呼吸而起伏的胸口,看了很久,生怕她會突然不動,看了不知多久,我才確定,是的,我們都安全了,都活着,我呼了一口氣,心中慢慢生了一片靜。我看着微亮泛白的天空,有恍如隔世的感覺。眼睛閉上,耳邊卻響起不斷的一下一下「啪、啪」槍聲,打散了原來心中的靜,之後眼睛一閉上就聽到槍聲,看見中槍團友身體在抽搐,不知他們是否已在往天國的路上,一直不能合眼。
菲律賓政府和警方對這件事的荒謬處理,全世界都看到,我也不用再多說,在醫院期間,看菲國新聞,知道其總統言行,聽到警隊為了替自己無能開脫而卸責給傳媒,竟要求在危急事件時封鎖新聞,我每每氣得在病房內大罵。在醫院的兩天內菲國官員和多方人員絡繹不絕的來慰問,總統妹妹也代表其兄來訪,我都把我的憤怒直接表達了,要求徹查和追究責任,給死傷者及其家屬一個交代。醫院裏的醫護人員倒是全都很盡心盡力的照顧傷病者,我非常感謝他們,我明白他們是想為他們國家造成的錯誤而盡力補償。
回港前,我去找梁太,想告訴她我們先回香港,也給她一點支持。梁太好厲害,很鎮定,還安慰我,她相信的神給了她很大的精神支持。不過,當我們說到當時車內最後的狀况時,大家都忍不住哭了起來。神啊,雖然我不是教徒,但無論如何,請祢照顧她已啟程往天國的親人,並給她和她仍在生死邊緣掙扎的兒子以無限的愛和眷顧。
我們曾經對菲國如此漠然
我一直想,是什麼讓一個曾是傑出警察的槍手變成冷血殺手?難道他就沒有任何罣礙?不擔心家人生活?是什麼把他逼上末路?他為什麼要用挾持人質的方式來逼政府重新審視他的個案,難道這國家沒有他可以申訴的途徑嗎?我這才明白,雖然我以前也有過好幾個來自菲律賓的同事,但我和大多數香港人一樣,對這個國家幾乎全無認識。明明香港有十幾萬菲傭生活在我們之間,甚至住在我們很多家庭內,但是我們對這個為我們提供了大量廉價勞工的國家和人民的生活狀况是如此的漠然。我們大概都知道菲國窮,才要在全球輸出傭工,但到底有多窮?我查看了一下,才知道原來菲國有三分之一人口活在貧窮線以下,槍殺、綁架的事情無日無之,這樣的情况之下,人民過的是什麼生活?我回想發生挾持事件之前二天,旅行團的行程當中有一項是到花車廠探訪,現場卻傳來了一陣陣惡臭,導遊指一下車廠圍牆外的一邊,是一個垃圾山,山上有不少小孩正在撿垃圾維生,讓人心酸無言。
菲傭變無能政府代罪羔羊
回到香港後,知道香港這幾天出現了不少反菲言論,網上有人說要把所有菲傭趕走,使菲國立即陷入經濟困境作為報復,又有菲傭在街上被辱罵,一聲聲「奴隸國、僕人國」來作菲國代號。我明白市民對菲國政府和警察的無能的憤怒,我親身體會,但是,這與菲國人民何干呢?難道我們都忘了被歧視的滋味嗎?香港曾是長久被殖民的一個社會,華人在體制上和生活上都被所謂的「主人」歧視,現在卻有一些香港人財大氣粗地聲稱「我哋請咁多菲律賓人,我哋係佢哋老細」,以一副「聘用你是恩惠,你卻敢以下犯上」的奴隸主姿態來責備那些和挾持人質事件全不沾邊的菲傭,實在讓人心驚。菲傭明明就是她們無能政府的受害人,正正因為政府無能讓人民溫飽,無數的菲國婦女才要離鄉別井、丟下自己的孩子去寄人籬下照顧別人的孩子呀,為什麼在香港菲傭反而成為無能政府的代罪羔羊呢?為什麼在悲憤的同時有些香港人會變成種族主義者?同樣讓人難以明白的是,香港政府竟也在此同時宣布要把包括菲傭在內的外傭繼續凍薪,使外傭都無法分享經濟好轉的成果,這是我們的政府在渾水摸魚嗎?政府能不能公開檢討外傭薪酬的標準和機制是什麼,在這個時候作這些舉動,給人政府要懲罰外傭的感覺,對消除仇菲情緒沒有任何幫助。有位友人引了魯迅的一句話:勇者憤怒,抽刃向更強者;怯者憤怒,卻抽刃向更弱者。香港人難道是只會向弱者開刀的怯者嗎?
公正調查追究責任慰亡靈
香港這幾天為了人質事件大家一同憤怒一同悲傷,我雖然沒有和其他團友討論過,但我想,團友們都會感謝市民的關心和支持。不過,要慰死難者在天之靈的方法不是責難無辜的菲傭或菲國人民,我們的焦點要清晰,針對菲國的政府和警方,要求公正的調查,追究事件責任,以及支持傷者及死者遺屬安排日後的生活,這才是對事件中死傷者的實在關懷,長遠而言,我們該更支持菲國人民建設更可靠的政府,更有公義的社會,這樣香港才真正算得上是國際社會的一員,有人道關懷的國際大都會。
各位團友,大家終於都回香港了,回家了。已離世的團友們,請一路好走,還請你們的在天之靈保佑你們在世的親人;身心受傷的團友和家屬們,請堅強起來,早日康復,以後的路還長,願大家都好好生活,大家保重啊。

到了下午一時多,槍手用簡單英語告訴我們三時會讓我們走,我聽錯了是八時,坐我旁邊那排的梁生還糾正我,是三點,梁生再問槍手確認3pm?槍手說yes,梁生大聲地回了一句good,大家也如釋重負。我沒有帶手表習慣,手機又被沒收,不時會問梁生時間,當梁生告訴我已經二時半,我的心又慌了,為什麼政府似乎仍是靜靜的沒有行動,又沒有答應槍手要求,自己心裏在想,要不要我們自己和槍手談判?可是槍手又似乎只會非常簡單的英語……好幾次槍手開門在車門前立足停下來時,我都想要跑到他身後用力把他踢出去,也在腦中預習了很多遍,但是又怕自己不能和司機溝通,怕司機不夠機警不會立即關門和開車逃走,讓槍手有時間反攻……我想了很多不同的可能性,最終都沒有行動,可能我只是在為自己的恐懼和怯懦找藉口。
多次商量擬合力制服槍手
時間一直拖着,始終未見任何解決事件迹象,我們在車尾的幾名團友再幾次商量要不要動手制服槍手。我們留意他的武器擺放在身上的位置,他走到什麼地方時最好動手,商量大家身邊有什麼可攻擊的東西,我說我雖然是身材矮小的女子,但如果男團友可以暫時壓着槍手,我可以搶槍和按着槍手的手令他不能行動,給時間車頭的團友逃走及求助,梁生亦靜靜叮囑子女在行動時要協助搶槍。可是,最終我們仍是猶豫,不敢亂來,皆因槍手把談判設定的限期往後推了又推,等待政府回應他的訴求,讓我們覺得,他是不想殺人的,直到槍手真的開槍射向前排幾個團友,梁生撲出去救家人時,一切都太遲了。後來我和梁太說起,原來她也想過要攻擊槍手,用她袋裏的繩子去勒槍手的頸。如果我們都可以勇敢一些,如果我們早些團結行動,如果我們沒有繼續等待警察救援而當機立斷行動起來,可能會有不一樣的結果,可恨的是,歷史是沒有如果的。
默念心經躲在椅底下保命
我躲在椅子底下,逃過了槍殺。剎那間,我不敢相信原來電影裏的情節真會發生在自己身上。我看到在另一排也躲在椅子底下的母親仍是活的,心就定了一些。第一輪槍擊後,車內很靜,這時天打起雷來,轟轟的一陣一陣,雨點又噠噠的打在車頂,更顯得車內一片死寂。車廂內很黑,只有槍手發現有人仍是活着時,再打出的一些槍聲和火光。我看到藍色的火光打入團友的身體,原來在蠕動的身體就不再動了,連哼一聲都沒有。隔了好一會,再又響起很多震耳欲聾的槍聲,和車身不斷被打擊的聲音,一切都不斷提醒仍生還的人,下一秒可能就會斃命。
看着前面那些不動的身體,我心裏自然的念起「謁諦謁諦,波羅謁諦,波羅僧謁諦,菩提娑婆訶」,希望已死去的團友可以快到彼岸,這是我長年看到有生命離世時的習慣。我不自覺地想,他們真的死了嗎?幾分鐘前仍活着的人,現在的靈魂仍在車廂內徘徊嗎?我把般若波羅蜜多心經慢慢的在心中念了很多次,一字一字的細細再咀嚼, 「觀自在菩薩,行深般若波羅蜜多時,照見五蘊皆空,渡一切苦厄……無罣礙故,無有恐怖,遠離顛倒夢想」,我想,我仍有什麼罣礙,心中轉念了很多遍,想起自己很多想做的事仍未做,想起親愛的家人朋友,能不死的當然仍是不死的好,但是心中已不像開始時那麼怕,最擔心的是母親在兩次的催淚彈攻擊中發出的咳聲會被槍手發現。槍戰好長好長,好像永遠不會完一樣,我感覺到自己的頭髮和身上染了很多血,都是別人的血,但是下一秒可能就是自己的血了。被救出來之後,這幾天都聞到血腥的味道。
救護車簡陋止血用品欠奉
在救護車上,我們要求救護員給雙手不斷流血的陳生包紮止血,救護員竟說沒有用品,我母親仍受着催淚彈的苦,她想喝水,救護員又說他們沒有水,我看了車上的櫃,果然是空空的什麼設備都沒有,只有苦笑。到了政府醫院,設備也非常簡陋。在我們被轉送去較好的醫院前,有不同的政府部門官員、不同救護機構的人員、領事館的人員,不停地問我為什麼槍手會發起瘋來,突然開槍,我不禁火了,當場忍不住就罵他們,他們到底是不是想救人?天底下會有那麼長時間來救人?槍手暴露了那麼多可以被攻擊的機會為什麼警察沒有把握時機?為什麼就不能先答應槍手的訴求先救人質……?陳先生不斷想找他的女友易小姐的消息,可是哪裏找,醫院裏亂作一團,同樣在醫院裏尋找子女的梁太看起來讓人心都要碎了,她雙眼睜得好大,盛滿淚水,似乎隨時會倒下,我一邊照顧受驚在哭的母親,一邊握着梁太的手,和她一起向在場的政府官員重複她的要求,要求政府人員帶她去找子女,但是無能的官員說,他們並不知道她的子女在哪個醫院……
血腥味揮不去閉目聞槍聲
我在醫院裏,把母親安頓下來,已是清晨近五時,我把染血的衣物褪去,頭髮已被乾了的血弄得僵硬,我洗了很久很久,濃濃的血腥味讓我有想吐的感覺。出來坐在沙發上,看着睡在病牀上母親順着呼吸而起伏的胸口,看了很久,生怕她會突然不動,看了不知多久,我才確定,是的,我們都安全了,都活着,我呼了一口氣,心中慢慢生了一片靜。我看着微亮泛白的天空,有恍如隔世的感覺。眼睛閉上,耳邊卻響起不斷的一下一下「啪、啪」槍聲,打散了原來心中的靜,之後眼睛一閉上就聽到槍聲,看見中槍團友身體在抽搐,不知他們是否已在往天國的路上,一直不能合眼。
菲律賓政府和警方對這件事的荒謬處理,全世界都看到,我也不用再多說,在醫院期間,看菲國新聞,知道其總統言行,聽到警隊為了替自己無能開脫而卸責給傳媒,竟要求在危急事件時封鎖新聞,我每每氣得在病房內大罵。在醫院的兩天內菲國官員和多方人員絡繹不絕的來慰問,總統妹妹也代表其兄來訪,我都把我的憤怒直接表達了,要求徹查和追究責任,給死傷者及其家屬一個交代。醫院裏的醫護人員倒是全都很盡心盡力的照顧傷病者,我非常感謝他們,我明白他們是想為他們國家造成的錯誤而盡力補償。
回港前,我去找梁太,想告訴她我們先回香港,也給她一點支持。梁太好厲害,很鎮定,還安慰我,她相信的神給了她很大的精神支持。不過,當我們說到當時車內最後的狀况時,大家都忍不住哭了起來。神啊,雖然我不是教徒,但無論如何,請祢照顧她已啟程往天國的親人,並給她和她仍在生死邊緣掙扎的兒子以無限的愛和眷顧。
我們曾經對菲國如此漠然
我一直想,是什麼讓一個曾是傑出警察的槍手變成冷血殺手?難道他就沒有任何罣礙?不擔心家人生活?是什麼把他逼上末路?他為什麼要用挾持人質的方式來逼政府重新審視他的個案,難道這國家沒有他可以申訴的途徑嗎?我這才明白,雖然我以前也有過好幾個來自菲律賓的同事,但我和大多數香港人一樣,對這個國家幾乎全無認識。明明香港有十幾萬菲傭生活在我們之間,甚至住在我們很多家庭內,但是我們對這個為我們提供了大量廉價勞工的國家和人民的生活狀况是如此的漠然。我們大概都知道菲國窮,才要在全球輸出傭工,但到底有多窮?我查看了一下,才知道原來菲國有三分之一人口活在貧窮線以下,槍殺、綁架的事情無日無之,這樣的情况之下,人民過的是什麼生活?我回想發生挾持事件之前二天,旅行團的行程當中有一項是到花車廠探訪,現場卻傳來了一陣陣惡臭,導遊指一下車廠圍牆外的一邊,是一個垃圾山,山上有不少小孩正在撿垃圾維生,讓人心酸無言。
菲傭變無能政府代罪羔羊
回到香港後,知道香港這幾天出現了不少反菲言論,網上有人說要把所有菲傭趕走,使菲國立即陷入經濟困境作為報復,又有菲傭在街上被辱罵,一聲聲「奴隸國、僕人國」來作菲國代號。我明白市民對菲國政府和警察的無能的憤怒,我親身體會,但是,這與菲國人民何干呢?難道我們都忘了被歧視的滋味嗎?香港曾是長久被殖民的一個社會,華人在體制上和生活上都被所謂的「主人」歧視,現在卻有一些香港人財大氣粗地聲稱「我哋請咁多菲律賓人,我哋係佢哋老細」,以一副「聘用你是恩惠,你卻敢以下犯上」的奴隸主姿態來責備那些和挾持人質事件全不沾邊的菲傭,實在讓人心驚。菲傭明明就是她們無能政府的受害人,正正因為政府無能讓人民溫飽,無數的菲國婦女才要離鄉別井、丟下自己的孩子去寄人籬下照顧別人的孩子呀,為什麼在香港菲傭反而成為無能政府的代罪羔羊呢?為什麼在悲憤的同時有些香港人會變成種族主義者?同樣讓人難以明白的是,香港政府竟也在此同時宣布要把包括菲傭在內的外傭繼續凍薪,使外傭都無法分享經濟好轉的成果,這是我們的政府在渾水摸魚嗎?政府能不能公開檢討外傭薪酬的標準和機制是什麼,在這個時候作這些舉動,給人政府要懲罰外傭的感覺,對消除仇菲情緒沒有任何幫助。有位友人引了魯迅的一句話:勇者憤怒,抽刃向更強者;怯者憤怒,卻抽刃向更弱者。香港人難道是只會向弱者開刀的怯者嗎?
公正調查追究責任慰亡靈
香港這幾天為了人質事件大家一同憤怒一同悲傷,我雖然沒有和其他團友討論過,但我想,團友們都會感謝市民的關心和支持。不過,要慰死難者在天之靈的方法不是責難無辜的菲傭或菲國人民,我們的焦點要清晰,針對菲國的政府和警方,要求公正的調查,追究事件責任,以及支持傷者及死者遺屬安排日後的生活,這才是對事件中死傷者的實在關懷,長遠而言,我們該更支持菲國人民建設更可靠的政府,更有公義的社會,這樣香港才真正算得上是國際社會的一員,有人道關懷的國際大都會。
各位團友,大家終於都回香港了,回家了。已離世的團友們,請一路好走,還請你們的在天之靈保佑你們在世的親人;身心受傷的團友和家屬們,請堅強起來,早日康復,以後的路還長,願大家都好好生活,大家保重啊。

公共空間
今早出外逛,
經過紅街市義子街一帶,
非常多人.
但奇怪的是,
發覺很多商户竟然將自己的貨物放在行人道上,
居然比自己店子內的空間還要大,貨品還要多
很明顯的是,
需要做事的政府人員沒有維護市民的權益,
日積月累下,
在人性自私的行為下,
行人的空間愈來愈小.

School Uniform
It is almost end of August, the TV news mentioned that the parents were busy on preparing the school uniforms for their kids, it reminds me my high school uniform.
When I was in primary school, we didn't need to wear school uniform, thus, we could have our own choices of causal wear.
But when I started my middle school, I needed to buy uniform, as my parents didn't have money for me to go to school, I worked during summer to cover my school fees and expenditures.
Therefore, I remember very well that I had only one uniform for each season.
And In the six years' student life, I only tailored made two new summer uniforms and one winter uniforms (one used winter uniform was offered by one of my mother's friend in my first year).
For the summer time, I paid very special attention for uniform, as I could not wash it every day, only two days or so, and I needed to wash it immediately after school, to make sure it had enough time to be dried for the next day.
I still remember that my first summer uniform became very tight in a short time :( and therefore when I made the second one in later years, mother insisted the tailorer to make it in larger size

Over all, I liked to wear the winter uniform, as I found myself more comfortable, and I had several white shirts offered by one of the aunts living next to my house. The cost of making one winter uniform was quite expensive, but the quality was very good, and I liked it very much.
At that time, I was really admired my schoolmates who could have two to three uniforms for the semester.
As time passes, it seems to me that it is only a minor thing in life, when we are in a difficult time, we need to learn how to adjust and overcome the problems.
When there is problem, there should be solution.
We should overcome it!

已經咳了約3個多星期,
醫生也先後由西醫換了中醫,

吃了藥又想睡覺,

真是很感動.

“立秋”過後,氣候仍熱。熱天易煩躁,保健養生,通常重養神,調飮食,養津液。如暑濕困阻中焦,煩渴,胃脘痞滿,宜清暑利濕,養心健脾。“荷蓮檸檬瘦肉湯”有其效用。
湯料:荷葉兩塊,蓮子二兩,檸檬半個,薏苡仁一兩,雞內金五錢,豬瘦肉半斤。
豬瘦肉出水,冲淨。各湯料洗淨。待湯鍋的清水煮沸後,放下湯料,約煲一小時,調味供用。
荷葉甘澀、平,清暑利濕,升陽止血。蓮子甘澀、平,益腎固精,補脾止瀉,養心。檸檬,味極酸,生津,止渴,祛暑。薏茨仁甘淡、微寒,利水滲濕,健脾除痹,清熱排膿。雞內金甘平,消食健胃,澀精止遺。《本經》“主泄痢”。《本草綱目》:“治小兒食瘧,療大人淋漓反胃,消酒積。”豬瘦肉則健脾滋潤。

曾與英軍和蘇格蘭 場合作反恐的保安事務分析員Charles Shoebridge認為,營救巴士人質的菲律賓警察表現英勇,但卻缺乏訓練和裝備。他點出了菲警十處應該做得更好的地方。
一、欠果斷
首批試圖衝進巴士的警察被門多薩擊退。衝進巴士的警察很勇敢。巴士很擠,又得一條通道,因此警察應預計會被槍擊。這類突擊隊成員應該是千挑萬選的異人,受過特訓,行事必須勇敢、果斷和進取。但在事件中,菲警的反應就如常人,一遭還擊就撤退,欠缺了將突擊任務進行到底的果斷。
二、缺裝備
警察只要有特別的爆破設備,就可以馬上打爛巴士的窗和門,但他們卻花了很長時間用大鐵槌擊窗,擊碎後又沒有梯爬進去。在狹窄環境內作戰,較適合用短身的衝鋒槍,但他們只有手槍和突擊步槍。
三、錯失制服機會
警方有很多制服槍手的機會,譬如當談判專家走近時,槍手並沒有提起武器,那時就應制服他。
四、錯失狙擊機會
槍手曾多次獨個兒站著,暴露於警方神槍手的射擊範圍。由於槍手的行為難以估計,警方應當把握任何可以迅速解決危機的機會。菲律賓警方這次可能是看不到時機,或者是考慮過後選擇繼續談判。
五、沒有滿足槍手要求
我不明白為何當局不答應他所有要求。當挾持事件不涉及恐怖組織,要求也不是釋放囚犯,當局其實可以答應其要求。將門多薩復職後,當局仍可以綁架罪判他終身監禁。菲律賓當局對要求的正面回應來得太小和太遲,初時只答應覆核其案件,到答應復職要求時,槍擊已開始了。
六、電視直播
電視直播令槍手可以完全了解身邊發生的事,這是警方行動的關鍵缺陷。警方應考慮以圍幕擋住現場,令攝影機拍不到巴士。
七、做不到突擊效果
槍手明瞭警方的行動,不單因為電視全程直播,也因為警方行動緩慢。警察沒有嘗試引開槍手的注意力,因此進攻時做不到突擊效果。
八、沒有保護圍觀者
由於容許公眾站得太近,至少一人被流彈所傷。槍手的M16步槍射程達一英里,很難完全防止流彈傷人,但當局至少應該做更多人群管理措施。

特首今日發表《香港家書》,說正要求菲律賓 政府交代,為甚麼未能答應槍手要求,以換取人質安全釋放。

各位市民:
過去幾天,對香港來說,是充滿了震驚、哀傷、憤怒和不解;但同時亦充滿了愛心、關懷、互助和無私奉獻的人性光輝。
星期一在馬尼拉 發生的槍手脅持人質事件,導致八名港人死亡,七人受傷。很多市民透過電視直播目睹事發經過,都忍不住流淚,甚至徹夜難眠。
我和出事的家庭一樣,有機會的話,都希望可以趁著假期外遊,和家人共度歡樂時光。但想不到一個冷血、自私的槍手,一次失敗的營救行動,令我們失去了八條寶貴生命,造成了幾個家庭難以彌補的創傷。一夜之間,太太失去丈夫,子女失去父母,白頭人送黑頭人……。我們原本和這些家庭素不相識,但今日卻好像親人一樣。他們的哀痛,我們感同身受;他們的淚水,刺痛我們每一個人的心。
我會擔心,失去丈夫和女兒的梁太,失去兒子的謝生謝太,失去父親的傅氏一家,怎樣才可以撫平那麼大的創傷呢?
我亦會掛念,綽瑤和政逸失去雙親,日後漫長的成長路如何走下去呢?
其他生還者的心理創傷,甚麼時候才會平復呢?
突然而來的橫禍,令原來幸福正常的生活,溫馨密切的親情和人際關係,一下子成為過去,實在叫人難以承受。
《聖經》記載了一件事。耶穌的朋友拉匝祿因病過身。耶穌來到,看到拉匝祿的朋友為他哭泣,自己亦難過得哭起來。即使是天主的兒子,面對人間的生離死別,亦難免百感交集,悲從中來。
面對今次慘劇,我們可以做甚麼呢?
我想起《聖經》提到,我們應該「與哭泣的一同哭泣」,意思是與哀傷的人同行,陪伴他們走過一段艱難的日子,盡力幫助和支持他們。
保安局 黎棟國副局長日前到馬尼拉安排死傷者返港,連日奔波勞碌。令我最難忘的一個片段,就是他親身探望梁太,搭著她的肩膀,安慰她,和她一齊難過,親身送上的關懷和慰問。
我相信苦難可以將人連繫在一起。透過感受別人的苦難,同聲哀哭,互相扶持,可以稍稍緩和他們的痛苦,給他們一些盼望。正因如此,我們設立網上平台和18區弔唁點,又在前日進行全港默哀,讓市民可以連結在一起,表達哀痛,遙寄思念。我見到市民當日在街上,在車上,甚至在餐廳酒樓,默默悼念。這些溫情暖意,我相信家屬和傷者是感受到的。
在這裏,我呼籲各位特別關心仍然昏迷未醒的梁頌學Jason的情況。他是梁太唯一生還的孩子,我衷心祝願他早日康復。
這次事件亦再次提醒我們生命無常。我們實在應該好好關心家人、朋友,珍惜眼前人。
沉痛悼念死難者之餘,政府各方面的支援工作仍會加緊落實。我們會密切跟進家屬和傷者在生活及心理上的各種需要,盡力給予幫助。
另一方面,我們會繼續與菲律賓政府跟進調查進展。我已經去信阿奎諾總統,要求馬尼拉政府全面、專業地進行調查。調查報告至少要交代幾個重要問題,包括事件發生經過,當局與槍手談判的詳細過程,特別是為甚麼菲律賓政府未能答應槍手要求,來換取人質安全釋放;以及警方的行動詳情及背後的考慮;和死傷者致命和受傷的成因。我亦要求,報告必須有足夠事實支持。我相信,只有全面和公正的調查,才能讓香港市民得悉事實的真相,還死傷者一個公道。
這次慘劇帶來了許多哀痛。面對難以理解的冷血和暴力,我們社會要不分種族、不分國籍,互助互愛、彼此支持、團結一致,這樣,才是最有力的回應。

(星島日報報道)最近在某本詩集裏讀到如此動人的話:「世人常因為玫瑰多刺,而埋怨上天;卻很少有人因為刺上長有玫瑰,而感謝造物主。」玫瑰有刺,還是刺有玫瑰,只視乎我們用甚麼角度去看待。也許有人聽到這番話會覺得不妥,甚至認為這不過是阿Q精神,當然是玫瑰有刺啊,玫瑰是焦點,刺只是旁枝末節,這是傳統看法,不是嗎?
傳統不一定真實
可我想問一下,傳統從何而來?傳統,不過是由人積累而成的習見,不一定真實,而且能夠隨時被推翻。而所謂阿Q是指扭曲事實來自欺,我不認為感激玫瑰有刺是阿Q啊,如果這樣也算是的話,那麼《聖經》所講,別把牙籤當木梁,不也是很阿Q的自欺了麼?
在黑暗裏看到光明,還是在光明裏看到黑暗,完全取決於我們用甚麼角度去看。你可以認為世界很醜陋,美麗的只是我們的一雙眼睛;也可以相信世界很美麗,醜陋的只是我們的一雙眼睛。要活得順心、開心,就得跳出世人既有的焦點,用另一種更積極感恩的角度看待世人世事,你失去的只是世俗的共鳴共感,但你看到的,卻不止是刺,而是玫瑰色的世界。從此,你的世界跟他們不再一樣,你得到的,也不再一樣。

But the single-letter code can make a big difference in some parts of the travel experience, even though most passengers don't pay any attention. A fare basis code further divides passengers into classes based on how much they paid and how far out they booked. There are about a dozen in coach class alone.
When you're on the plane, there's no difference in service between a passenger who has a "Y" or "Q" — a full-fare and a discounted ticket — if you're both in coach. But the codes are still important: Some indicate your trip isn't eligible for frequent-flier miles or an upgrade; others tell a ticket agent where to rank you on a standby list.
Deciphering the code
The letters airlines assign to certain levels of coach can vary widely, but a couple are universal. "Y" class is a widespread denotation for the highest class in coach among most major airlines, according to Jami Counter, senior director of TripAdvisor Flights and a former pricing strategist at American Airlines. These tickets are usually fully refundable, last-minute coach fares purchased mainly by business travelers. They're the most expensive tickets, but they have the most flexibility.
Some others that are generally used among the airlines: "J" or "C" usually indicate business class. "F" and "P" denote first class or premium.

Taxi Driver
Last week, took a taxi back home in the early morning from Taipa.
The driver was very talkative and seemed to be very nice, he mentioned this and that during the trip.
By the time the taxi arrived my place, the driver told me the charge, and I gave him a 100 patacas note.
He didn't say anything, but quickly checked his money and gave me the change.
I was relieved to be home, however, when I checked the receipt, I realised that he over-charged me. What a driver!!!!
I think this is a dishonest behaviour, all my good impressions of this driver disappear!!

First Floor Hot Pot - 2010.8.24
Wandering in the street and looking for place for dinner, and met a Chinese restaurant called "First Floor Hot Pot" in Nape.
MOP70 per person with unlimited order for food - it was very attractive, however, there was no table, thus needed to wait.
By the time got the table, it was already 10 - and the price was lowered to MOP60 per person - with extra 10% service charge and the charge for two small plates for MOP5 each.
The restaurant was full, service was OK, but the food I chose was good - I like the beef and the chicken with wine - very delicious, by the time after 10, it was not so crowded as around the dinner time.
It can be a good place for gathering - friends meet together and have a nice Hot Pot - so wonderful!

During the stay, I saw several customers entered in, and also were disappointed to know that the opening hours was up to 10, it was still early!!

Consulting Chinese Medicine Doctor
Have been coughing for two weeks, though have tried several treatment, still didn't have any good improvement.
This morning, M called and chatted for a while, and she recommended one doctor who is closed to my home.
Actually, my colleague mentioned this doctor to me few days ago, thus, went to consult this doctor instead of my existing one.
Arrived there around 11AM, and waited for half an hour - in front of his consultation area - as the shop is not very big.
The doctor is a Chinese medicine doctor, looks young but seems that he has experience and he has plenty of people consulting him.
When it was my turn, it was pretty quick. I told him my conditions, and he checked my pulses, then, he wrote down the prescriptions.
The shop assistants were also very professional, I saw them taking all kinds of medicines, according to the list, without any measurement but more or less of the quantity.
Then, I brought home with four pack of Chinese herbal medicines.
Have to boil the medicine at home - this is my Sunday program!

人在旅途
原本三小時多的機程,
因為重重波折,
由下午2時,
開始在機場等,
直至晚上11時才能最終起飛.
回澳門時,
已是早上2時,
但等的士的人多達20多人,
卻良久才來一部一部的士,
沒有駕車的同事也說:
此時是考驗一個人是否有一個可半夜電話找幫忙的朋友,
若沒有的話,
應好好檢討!
到家時,已接近3時!
非常的想好好睡一下.

The day before yesterday, I went to the Popular drug store.
As usual, it was crowded with the people from mainland China.
I was in the section looking for some vitamins, and by the time I was reading the information, there was a lady who was also searching for her target items, however she had problems on reading English.
By the time, I paid my items, I heard this lady asked the staff for explanation, and she told the staff that " Why the products' description do not include the Chinese language, you should know that we, people from mainland are the target customers, your store should consider this need. This is a service!".
The staff had no comments on that, but he tried to explain that the products were from foreign countries.
As usual, it was crowded with the people from mainland China.

Movie of 1989, I first saw this movie in Berea, when I was a student, and I quite liked it .
After that I had several chances to watch this movie again, still, I like this funny story. This is life !!
In the movie, I think Meg Ryan was pretty and young, Billy Crystal and Meg Ryan remind me of my everyday live in this true-to-life movie !!
I think when I am getting old, I would still love to see this movie.

【明報專訊】對於政治記者來說,噚日絕對係黑色星期五。以往政府高官經常半開玩笑咁話,如果有咩政治爛攤子,最好係等8號風球,或者有咩死人塌樓先推出嚟,等傳媒應接不暇。由於頭版只有一個,而一般報紙嘅社論,每天亦只會討論一個題目,因此「負面新聞」若然喺同一日推出,自然會有「排擠效應」。這樣一來,「負面新聞」的社會效應便可以降至最低!噚日,政府明顯咁用上咗這一招。

【明報專訊】最新人口普查 最令大眾關注的,除了社會進一步女多男少外,就是人口老化會持續。根據聯合國 定義,一個國家或地區60歲以上人口佔總人口的一成以上時,就進入老齡化社會,而香港19區中,已有13個區錄得這樣的數字。
人老了都希望安享晚年,幾代同堂當然開心,入住老人院也是其中一個選擇,兩者都能得到較好的照顧,但近年愈來愈多長者選擇獨居。
荔景村是本港典型的「長者村」,走進村裏,不難看見長者圍在一起乘涼聊天的情景,原來村內兩成人口是65歲以上,住了30多年。別以為獨居就是孤單,說是晚年坎坷,其實獨居生活一樣可以精彩,取決於你如何度過。
獨身婆婆做個愛美快活人
85歲的郝寬婆婆年輕時打住家工,工作忙碌,出外的機會不多,在28歲那年決定梳起不嫁,自力更生,生活優哉悠哉,現在獨居於荔景村,閒時看大戲錄像,邊看邊唱,又或到樓下社區中心坐坐,與村內老友記談談天。雖然未有愛情滋潤,但郝寬婆婆的皮膚亮麗雪白,臉上皺紋數目跟年齡不成正比。拿起桌上一瓶瓶的護膚品,在兩邊臉頰塗一點,又往額上塗一點,左搽又抹的,郝寬婆婆叮囑冬天天氣乾燥,要多用一點,200多元一小樽的潤膚露,她都捨得花錢買下來,延續年輕時的漂亮容顏,縱然婆婆笑說:「可身材卻不復當年苗條!」愛美就是女人的天性,無分年齡。愛美也是一種讓自己快樂度日的堅持。

除了面容,保持身體健康也是晚年生活的關鍵。凌晨3時多,73歲的周柳心就已經梳洗好,喝一杯牛奶,吃幾塊餅乾,背起小包,拿起行山杖,準備出門晨運去,日日如是,風雨不改。周婆婆的腳步很快,每天鍛煉讓她由天黑一直動到天亮,一副精力不盡的軀體,石級、欄杆就是她做健美操的輔助器材。勤做運動之外,周婆婆也十分注重飲食,少吃多餐,不沾肥膩食物,小時愛吃的豬油撈飯更是不再吃,其實都是老掉牙的養生之道,在乎你是否重視身體,堅持還是放縱。

【明報專訊】最新人口普查 最令大眾關注的,除了社會進一步女多男少外,就是人口老化會持續。根據聯合國 定義,一個國家或地區60歲以上人口佔總人口的一成以上時,就進入老齡化社會,而香港19區中,已有13個區錄得這樣的數字。
人老了都希望安享晚年,幾代同堂當然開心,入住老人院也是其中一個選擇,兩者都能得到較好的照顧,但近年愈來愈多長者選擇獨居。
荔景村是本港典型的「長者村」,走進村裏,不難看見長者圍在一起乘涼聊天的情景,原來村內兩成人口是65歲以上,住了30多年。別以為獨居就是孤單,說是晚年坎坷,其實獨居生活一樣可以精彩,取決於你如何度過。
獨身婆婆做個愛美快活人
85歲的郝寬婆婆年輕時打住家工,工作忙碌,出外的機會不多,在28歲那年決定梳起不嫁,自力更生,生活優哉悠哉,現在獨居於荔景村,閒時看大戲錄像,邊看邊唱,又或到樓下社區中心坐坐,與村內老友記談談天。雖然未有愛情滋潤,但郝寬婆婆的皮膚亮麗雪白,臉上皺紋數目跟年齡不成正比。拿起桌上一瓶瓶的護膚品,在兩邊臉頰塗一點,又往額上塗一點,左搽又抹的,郝寬婆婆叮囑冬天天氣乾燥,要多用一點,200多元一小樽的潤膚露,她都捨得花錢買下來,延續年輕時的漂亮容顏,縱然婆婆笑說:「可身材卻不復當年苗條!」愛美就是女人的天性,無分年齡。愛美也是一種讓自己快樂度日的堅持。
跟「豬油撈飯」說再見
除了面容,保持身體健康也是晚年生活的關鍵。凌晨3時多,73歲的周柳心就已經梳洗好,喝一杯牛奶,吃幾塊餅乾,背起小包,拿起行山杖,準備出門晨運去,日日如是,風雨不改。周婆婆的腳步很快,每天鍛煉讓她由天黑一直動到天亮,一副精力不盡的軀體,石級、欄杆就是她做健美操的輔助器材。勤做運動之外,周婆婆也十分注重飲食,少吃多餐,不沾肥膩食物,小時愛吃的豬油撈飯更是不再吃,其實都是老掉牙的養生之道,在乎你是否重視身體,堅持還是放縱。

藍天白雲
早上,
上班的路上
天氣已經很熱.
陽光亦開始很猛烈,
臨走近板樟堂教堂時,
看見美麗的藍天白雲.
配合四周的街景,
真是非常迷人.
可惜要上班去,
要同藍天白雲說再見.
不料,
回到辦公室後的不久,
只有數分鐘的光景,
室外走回來的同事告訴我
街上下起雨來.
整個早上都下著雨.
原來,
藍天白雲
可以是這麼短暫,
一剎那間,

This morning got a mail from E, who told me he is coming back on next Monday night, as his father is very sick.
Really sorry to hear about that, it is quite difficult to see our parents when they are getting old and sick, still it is part of our life.

In a charity fair, there was a sale on books - 3 dollars for each.
There were plenty of people choosing the books as they were really in bargain sale - all the books were contributed by the people for charity purpose.
For the easy administrative work, the rule was - "no change", all the money went into the box. It would also welcomed people to pay more in kind or contribute their change as well.
A man chose three books and he paid 10 dollars into the box.
Then, he left.
Later on, the man came back and he chose again another two books.
But this time, he insisted to pay only 5 dollars, as he said that just now, he paid one dollar more, with that dollar, and the 5 dollars, it covered two books' cost.
The man spoke loudly and insisted to do so.

(星島日報報道)現年七十一歲的安老事務委員會主席梁智鴻,經常走訪長者家庭,了解他們的需要,多次探訪中,最令他難忘的是一對老夫婦,不是因為他們生命力特別頑強,也非他們特別貧困,只因他們兩口子不但可以「貧而不怨」,而且還可以活得開心。
長者非都想攤大手板
「不是每一個長者都想攤大手板拎福利!」梁智鴻早前曾到九龍城一唐樓,探訪一對鶼鰈情深的老夫婦:年過八旬的丈夫須輪椅代步,老妻則年逾七十歲,兩人所住的唐樓並沒電梯,而且家在七樓,雖然房子是自置的,但兩人平日只靠領取每月合共二千元生果金過活,老妻每天更兩次到樓下的士多執拾紙皮變賣,一天四次上落七層樓梯,面不改容,連同每月變賣紙皮的二千元,兩口子靠四千元過活已感滿足。
梁智鴻力勸老婆婆領取綜援,「只須簽一個名就可」,但不得要領。婆婆每天除有士多預留大疊紙皮外,原來茶餐廳的侍應更會留下剩餘的湯水,親自上門送給兩老,兩老感到好開心,「原來老人家開心,可能就是有人每天關心一下!」

水 適量(蓋過全雞)
冰水 適量(蓋過全雞)
薑蓉材料
沖繩石垣島海鹽 1茶匙
薑蓉 4湯匙
葱粒 1茶匙
油 5湯匙
做法
1. 以海鹽、鹽焗雞粉及紹興酒塗勻整隻雞及雞身內。
2. 以保鮮紙包裹雞身,放進雪櫃醃至少8小時。
3. 將薑片及葱塞進雞身內。
4. 煲沸水,下八角、花椒、香葉、草果及芫荽,轉小火煲約半小時後,下雞,大火煲至水再滾起,將雞胸翻向上,蓋鍋蓋,熄火,焗至少50分鐘至熟。
5. 取出雞,立即以冰水將雞身急凍,浸約十分鐘後,取出,於室溫風乾數小時至外皮乾透。
6. 食用時才切件,將薑蓉材料混合,燒熱油淋在薑蓉上拌勻即可。

.加酒添層次 可在浸雞水內加入適量紹興酒,以增加味道層次。
