Jacky Yu 話梅花雕醉豬手食譜
材料: 豬手 2斤 蔥 3棵 薑片 6至8片 芫茜 2棵 醃料: 話梅 約20粒 (約120克) 鹽 2½湯匙 紹興花雕酒 2杯 清雞湯 3杯 碎冰糖 1茶匙 做法: 1) 豬手洗淨後以大鍋水煲滾,加入葱、薑片和芫茜,改中火煮30分鐘至熟 2) 將豬手撈起浸入冰水,冷卻後撈起瀝乾水分 另備一盆,放入話梅、冰糖和鹽,將煮滾後的清雞湯趁熱倒入盆中,加蓋將話梅泡至出味,冷卻後加紹興花雕酒,攪勻成醃料。將3) 豬手放入泡醃一晚即成,上枱時加少許醃料汁拌吃。 貼士: 如喜歡吃較稔的口感,豬手可煮1-1.5小時。 不同的話梅鹹酸程度都不同,話梅和鹽的份量要因應個人口味而調整。
